I have had this recipe for these delicious delicate cookies for over 40 years and I still love baking and eating them........I have cut them out in so many different shapes for different occasions and still get so many compliments...........well this recipe is from the old original Betty Crocker red cookbook I receoved for a wedding present 44 years ago.
They do take a little time but so worth it.........I know I have shared this recipe many times but just thought I would once more incase you are needing a wonderful cookie to bake for you or give as a gift.........let me know if you do.
my kitchen has been a mess all morning but this is the first chance I have had to do a little baking before the kids get here...........
Pumpkin Bread Biscotti
I just looked on the internet for a basic pumpkin bread recipe and you bake accordingly to the directions of bread........then you can turn them into Biscotti by slicing the bread into thin slices and bake them at a low temperature for several minutes to crisp them up.......so easy and so good to dip them into that hot cup of coffee for breakfast or in the middle of the afternoon......
I haven't sliced them yet to rebake them because I wanted to freeze them for a couple days so it's easier to slice thin later.........
Mint/Lemon punch
We had a surprise 50th birthday party last weekend for a dear friend and I made this punch..........it's so easy to make and I kind of winged it because I have lost the original recipe but I think it worked because I had people coming back for 2 and 3 refills ( and it's non-alcoholic)
I squeezed 12-15 lemons and put into a good sized glass gallon jar........along with a big bunch of fresh mint.
then make simple syrup with 3 cups water and 3 cups sugar......boil until it's all dissolved and pour over the lemons and mint. Let it steep for several hours. Then strain the liquid into another container and let set to cool. I then put in refrigerator until ready to serve.
Put about 3/4 bag of Sonic crushed ice in punch bowl and add about 3 cups of the simple syrup/lemon mixture along with 1 liter of Ginger Ale and stir..........this is so refreshing and once you make it you can add more lemon, more mint, more ginger ale.........good luck and enjoy.
If you are lucky enough to find Meyer Lemons I would recommend using them......they are so much juicier and a little more sweet than just a regular ole lemon! We grew up using meyer lemons because my mom had a tree in her backyard...........so try them sometime if your grocery store carries them!!!!!!! You will be spoiled!
