For you girls who were in the shrink class a few weeks back I promised the recipe for these cookies........sorry it took so long. You can cut them into any shape you want. These make wonderful Valentine cookies with pink and red frosting ........make sure you don't make the hearts to big because remember you have two cookies to each one......have fun!
This second recipe is from my niece, SUGAR CREAM PIE.......... this is REALLY good........she brought one this past Thanksgiving and no one touched it because it wasn't your typical pumpkin, chocolate or pecan pie..........so I decided to try a slice and I was hooked..........since my slice was the only one taken and there was almost a whole pie left I decided to take a piece home and it was better the second day. It has a custard type filling and a creme brulee topping..........
Yes we do like this pie......
Sugar Cream Pie
I pie crust
4 tbls. cornstarch
3/4 cup sugar
4 tbls. melted butter
2 1/4 cups heavy cream
1 tbls. vanilla
4 tbls melted butter
1/2 cup sugar
2-3 tsp. cinnamon
Pre heat oven to 325. Pre bake the crust for 10-15 min
add the cornstarch, sugar, melted butter and heavy cream in saucepan and stir and heat over medium heat until the mixture is thick and creamy, make sure you stir constantly. When it has become thick and creamy take off heat and add the vanilla.
pour the mixture then into the pre baked pie crust and drizzle the topping mixture on top. Bake for approximately 25-35 min. depending on how your oven bakes. Then turn the broiler on and broil for 1 minute to set the topping. Remove from oven and let it come to room temp and then refrigerate .........I would make this the day before you are serving it.
(I did make one mistake on the topping.......I had 1 cup sugar instead of the half cup so I had to melt more butter and add to the sugar/cinnamon ..........it didn't pour or drizzle out so I just plunked it all over the top and tried to make it smooth and cover the entire surface.........I think I kind of like my mistake because it was that much more sugary.....I didn't even have to broil it because all the topping was already set..........so you can make it exactly like the recipe or make a mistake like me.......I don't think either way it will hurt............so so good! Let me know if you ever try this because I would love to know what you think.)
And my Christmas plant is in full bloom..............it took a while but it is absolutely beautiful. This was the most it has ever bloomed and I have had it for 3 years now....it loves my front kitchen window!
