Another great class with fun gals.......we laughed and carried on all evening and it was good to be back in the classroom once again. Thanks girls..... you all did an amazing job and I hope you enjoy filling your Easter album with memories gone by or future ones! Sorry Becky you had to leave early but I did snap this of you working away!
Apricot Bars ( Pioneer Women recipe)
1 1/2 cups flour
1 1/2 cups oats
1 cup brown sugar
1 tsp. baking powder
1/2 tsp. salt
1 3/4 sticks butter cut into pieces
1 jar apricot preserves or if you can't find I used the Smuckers Simply fruit
Mix together all ingredients but the preserves, I used my fingers to break up the butter with all the dry ingredients. Press one half the mixture into a 8x8 greased pyrex pan. Then spread the entire jar of Apricot on top of the first layer and then sprinkle remaining mixture on top and pat this down. Bake at 350 for 30-40 min. Let completely cool before cutting.....I think if you wanted to use any kind of preserves it would work .........
of course this was my breakfast, it has oats and fruit in it!!!!
