This week I decided for class to make this pound cake..........I love a good pound cake.
I remember growing up my mom would always ask us before our birthday what kind of cake we wanted, mine was always pound cake..............
Here is the recipe: Ritz Carlton Pound Cake
3 cups flour
1 tbls. baking powder
3/4 tsp. salt
2 cubes unsalted butter room temp
1/2 cup crisco
5 large eggs
1 cup whole milk, I used half and half because I had some
6-8 Tbsp. fresh squeezed lemon juice
1 zest of one of the lemons you squeezed
powdered sugar
Spray 2 loaf pans or one bundt pan.
Cream together the butter, crisco and sugar. add eggs one a time, beating until well blended.
Add dry ingredients in three additions to butter mix alternately with the milk, beginning and ending with flour mixture. Beat at low speed just until blended after each addition. Mix in lemon juice and zest.
Pour batter into prepared pans. Bake cake until tester inserted into center comes out clean, about 1 hour. ( depending on your individual ovens) Cool cake in pans for 15 min. Turn cake out and cool completely.
Please make this cake and enjoy with a cup of good strong coffee............



Great recipe and super easy to follow. The outcome was delicious. The only think my husband said was that it lacked the real buttery-ness that pound cakes are supposed to have.
I added some lemon zest into the mix and topped with lemon curd instead of the glaze.

Pound cake was my dad's favorite also - he wanted a plain pound cake so he could then add strawberries or another topping. This looks great - I'll have to try it.
