Jalapeno Poppers

Let me just say, these are so goooooood and really easy to make! A little addicting, so you may want to make more than you think you will consume. If you are like me and have ever heard of the "Pioneer Woman" this is one of her recipes from her first cookbook.
18 fresh jalapenos
1 8oz. cream cheese ( softened)
2-3 chopped/sliced green onions
18 slices thin bacon
barbque sauce


wash and cut japalenos in half lengthwise.........scrape out the seeds and membranes with spoon(not your fingers ) pat dry and then stuff with the cream cheese mixture. Wrap the bacon around each half stuffed pepper and secure bacon with toothpick. This is where I did half and half. I know many people don't like the taste of BBQ sauce so I only brushed half of them with the sauce and left the others plain!

Place in a 300 oven for 1 hour......I turned the oven up the last 10 minutes to 400 to brown the bacon and because I was running a little late.....so you can judge this by your oven and time. Take out and you can either eat them warm or room temperature.........it really does not matter because they are wonderful either way!
Fresh Corn Salad with fresh Basil

I could of eaten this big ole bowl by myself.....but then I would of been sorry later! The freshness of the corn/tomatoes/basil/avocado made this so simple and delicious.


Corn Salad
5 ears corn washed and cut of the cobb
1 red onion chopped
3-4 red tomatoes cut in chunks
hand full of small yellow tomatoes sliced in half
1 cup or more of fresh cut up basil
juice of 2 fresh limes
salt and pepper
2 cut up avocados
Saute the corn in olive oil and 1 tbls. butter. Take off and let rest. Then add the other ingredients and serve. I cut the avocado just before serving. ( If you wanted to grill the corn before you cut of the cob you can and it will give it a different flavor) This recipe is one of those that you can add other ingredients.....just make it your own. I love it!
Fresh Peach Pie

I did not get a really good photo before it was already gone.........so this is what I have left!
1 baked pie crust
2 small pints real whipping cream whipped
5 large plus 4 small fresh peeled peaches
brown sugar
2 lemons
Bake pie crust and cool. Whip one small carton whip cream with 2 tbls. powdered sugar. Completely coat the bottom and sides of the baked pie crust, put in refrigerator. While the crust is in the ref. slice the peaches and drizzle juice of 2 squeezed lemons add a few tablespoons of brown sugar ( if your peaches are really sweet you won't need a lot of sugar).......after you have mixed the juice and brown sugar over the peaches, lightly and gently stir...........after a few minutes pour the bowl of peaches in a colander to drain out all the juices, you don't want a soggie crusted pie. Take out pie crust and gently place the peaches in the crust. Then whip the other carton of cream and spread on top of the pie! That's it ! So refreshing and soooooooooooo good!
