I have always loved Ina Garten the Barefoot Contessa's recipes and her Food Network show! She always makes it so easy to follow her recipes and nothing that's to hard to make! Christmas time usually means trying a new recipe or two and this year I decided on her Roasted Cauliflower Snowflakes.....I forgot to take photos so these photos are from her new cookbook Make it Ahead!
We all loved this and to be truthful I am not a big Cauliflower fan.........but this was really tasty and so super easy! I will give you this recipe below.......
ROASTED CAULIFLOWER SNOWFLAKES
1 head cauliflower ( about 2 1/2 lbs)
kosher salt and fresh black pepper
1/2 cup panko crumbs ( Japenese bread flakes)
1/2 cup grated Parmesan cheese
Remove the leaves and trim the stem of the cauliflower but leave the core intact. With a sharp slicing knife cut the whole cauliflower in large 1/2 inch thick slives. Don't worry if the slices fall apart: they will look like snowflakes. Place the Cauliflower on a sheet pan and drizzles with olive oil and sprinkle with salt and pepper. Roast the cauliflower for 15 min. Take out and toss the panko with 1 tbls oilive oil, sprinkle on the caulifower and roast for another 10-15 min., until tender and browned. Sprinkle with the Parmesan and roast for another minute or two. Immediately scrape the pan and toss the mixture together.....serve hot or room temperature! Enjoy!
